Fast & Easy Pea Soup
I am always looking for a fast dinner recipe for busy Mondays! I love fast and easy Crock Pot recipes! There is usually minimum prep and a few hours later you have a beautiful dinner! My family enjoys pea soup so this is an easy dinner for me!
Here is the recipe with a few tips I added to make sure this is FAST and EASY!
1 large onion diced
2 carrots diced
2 celery ribs diced
TIP: I bought an already chopped soup blend with these exact veggies! It saved me at least 15 min in peeling, chopping and cleaning up!
1 Tbsp fresh thyme
TIP: I use dried thyme since I always have that in my pantry!
1 tsp. salt
1 tsp. pepper
1 pound split green peas
TIP: Soak the peas for about 1.5 hrs so they absorb water. If you skip this step they will drink up all the water in your crockpot and you will be left with very thick soup!
6 Cups chicken or vegetable broth. (bullion in water is a good alternative)
1 Smoked Turkey Thigh or Leg (Optional)
2 Hot Dogs (Optional)
TIP: The meat gives the pea soup a lovely flavor! If you like meat better, add stew beef.
Start by soaking your peas in water for about 1/5 hrs (add 2 inches of water over the top of the peas). Drain and add to Crock Pot. Add salt and pepper. Add chopped vegetables. Add bay leaf and thyme. Add 6 cups of low sodium chicken or vegetable broth. Add smoked turkey leg and hot dogs. Cover and cook for 8 hrs on low. If you are in a rush cook on high and turn down to low after half the time!
This is My Mother-In-Law's recipe. She only adds a smoked turkey thigh but I grew up with hot dogs in my Mom's pea soup so I now add BOTH!
